There’s something about sourdough that’s just so damn addictive. Maybe it’s the gorgeous nutty brown crust, the moist, chewy inside, or the balance of sweetness, earthiness, and yeastiness. Fun fact: sourdough dates back to at least ancient Egyptian times and it was probably discovered by accident when someone (a genius if you ask us!) left a mixture of water or milk and ground-up grains out the open air, which allowed wild yeasts in the air to settle into the mix. While sourdough is not too difficult to make on your own, it does take time, so we’ve put together this handy list of stellar bakeries where you can grab expertly crafted sourdough loaves to take home. (Ranked in no particular order).
1. Mother Dough
Named after the starter culture that is vital for any sourdough loaf to come into being, this halal bakery on North Bridge Road is run by Naadhira Ismail, who studied at the International Culinary Institute in New York. This is her first venture and an opportunity for her to finely hone her craft baking artisanal goods like sourdough loaves and baguettes made with a mother dough that travelled with Naadhira all the way from New York. You’ll also find fab pastries and sweet treats like croissants, cookies, cakes and brownies.
Mother Dough, 749 North Bridge Road #01-01, Singapore 198717. p. +65 6909 6604. Open Tue – Sat 11am – 6pm, Sun 11am – 5pm
2. Bread Createur
What makes the sourdough unique at Bread Createur? The combination of French wheat flour and rye flour with a natural liquid leaven left overnight to ferment. The result is a beautiful crusty loaf with just the right tanginess. Owners and head bakers Louis Koh and Elvis Liew put just as much attention to detail in their other artisan bakes, which include baguettes, ciabattas, croissants and seasonal specials like hot cross buns for Easter. You can also grab great brunch dishes and sandwiches for lunch.
Bread Createur, 182 Jln Jurong Kechil, The Hillford #01-51, Singapore 596152. p. +65 9179 5804. Open Tue – Sun 10am – 7:30pm
3. Nick Vina
Bread lovers in the know head to Nick Vina for divine loaves including the classic sourdough. Chef Nick Chua’s version includes a mix of wheat flour, rye, spelt, durum, barley malt, and cornmeal. What also makes the bread unique is the process, which Nick learned while he was studying European baking techniques in Hanover, Germany. It involves working the bread on a wooden worktop, in a wooden proofing cabinet, German proofing basket, dough cloth linen, and stone steam oven.
Nick Vina, 12 Gopeng Street, Icon Vilage #01-54/55, Singapore 078877 p. +65 6224 7848. Open Mon – Fri 8am – 8pm, Sat 8am – 3pm
One of the first things that hits you when you walk into Sideways is the divine aroma of freshly baked bread wafting out of the wood-fired oven. This isn’t a bakery per se, but rather a cosy restaurant specialising in wood-fired food like freshly baked bread with creamy dips, stuffed flatbreads, slow-roasted pork belly, and blackened barramundi. However, if you swing by later in the day, they might have an extra loaf they will be happy to sell you. Insider’s tip: your chances of snagging a loaf are higher on weekdays.
